Smokey garlic, chilli and spring onion dressing


2 large Spring onion's finely sliced

1 tsp of capers finely chopped

1/2 a chilli of your choosing finely chopped

1/4 of a white onion finely chopped or grated

1 sweet dill pickle finely diced

1 clove of Garlic minced

a small hand full of parsley finely chopped

2 tsp Moscatel wine vinegar

2-3 tbsp of smoked garlic chilli oil

a good pinch of salt

a good pinch of pepper

The Method

This is an easy and quick recipe but the end result is amazing on fish, eggs, tacos, chicken or roasted veg to add a wonderful fresh and vibrant punch of flavour. keeps in the fridge for 3 days easily so it can be made in advance.

Prep each of your ingredients and add them to a small bowl stir well to ensure the ingredients are well combined and you are ready to go.

you can adjust the seasoning and the vinegar content to your own tastes but just remember you can always add but you cant take away so go easy when adding more of anything.

If you want to go big with the chilli you can always add a tsp of Hot Chilli Hodgepodge this will really boost the heat levels
