Spicy Slow roasted tomato Pasta

Ingredients

1 Punnet of ripe cherry tomatoes

1 Tbsp good olive oil

2 tsp either Chilli & Pepper Rub or Hot Chilli & Pepper rub

Your choice of spaghetti, Linguini or tagliatelle

Parmagano or pecorino to garnish

The Method

Place your tomatoes olive oil and your choice of rub in a high sided baking tray or oven proof dish

shake the pan so that the tomatoes are evenly covered in the olive oil and rub

Roast on a high heat for 20-25 min or until the tops of the tomatoes are starting to brown and the tomato juices are starting to pool in the bottom of the dish

remove from the oven

Bring a deep pan of salted water up to the boil and cook your choice of pasta my preference is for spaghetti but choose your favourite

Cook pasta until just under al dente then drain ( please reserve some of the pasta water about 2 tbsp's worth.

return to the pan and place back on a low heat with the pasta water.

Add your cooked tomatoes with the juices to the pasta pan and gently stir whilst allowing the tomato juices to finish off cooking the pasta and reduce to a thick sauce.

serve piping hot with your choice of cheese and if you want to be fancy some fresh basil or chilli oil with rosemary and garlic to garnish but make it your own.
