How to make them.
1 wash your carrots: you can also peel them if youlike but a good clean should be enough. If you can use carrots that arerelatively the same size so they will cook evenly. Top and tail the carrots andthen cut them in half length ways this will help with the cooking time. Put thecarrots in an oven proof dish or baking tray.
2 Make the Glaze: Add a table spoon of ThaiTingler to a bowl and add a drizzle of HOT water this is just to help loosenthe jam, Mix in a tea spoon of olive oil and a good pinch of sea salt and Freshground black pepper
3 Add the glaze to the Carrots: The glaze adds sweetness to theglaze. Plus, it will slowly caramelize in the oven for a heavenly flavour somake sure you cover the Carrots well and if the Glaze is to stiff or clumpy adda little more Hot water but don’t make it runny as the carrots will alsorelease liquid as they cook.
4 Cook: Bake in a medium oven around 160C or gas mark 5-6 until the carrots are soft but not mushy and you have a nicecaramalisation on the glaze.
Serve:great with roast dinner, wonderful as a side dish for any meal and great inleft over sarnies to add some sweetness and spice.
